Noodle Free Lasagna

Since going gluten free I have really missed eating lasagna! Lasagna is a comfort food something to enjoy when you are down in the dumps! Since I have not been able to find gluten free lasagna I decided to try substituting the noodles for vegetables. Not only does using vegetable over noodles cut the carbs in the meal it also ads great vitamins and fiber easily to your diet. The best vegetables I could think of to replace the noodles is eggplant and zucchini.  Trust me you cannot taste the difference. It is a perfect substitute for that comfort food that you might be craving. I also want to add that this lasagna can freeze easily and can be taken out on that day you just do not feel like making a lunch or dinner!

COOK THIS: Noodle Free Lasagna

Prep time: 5-10 minutes     Cook time: 30-40 minutes at 400 degrees F

Serve with: a nice caesar salad and a glass of red wine!

Did you know: That eggplants are very low in calories, a cup of eggplant has 40 calories! It is the perfect vegetable in vegetarian dishes as it has a meaty flavor and texture. Eggplant can sometimes have a bitter flavor though so to eliminate this cut the eggplant up, sprinkle it with salt, put it into a colander, and leave it to drain for about 15 minutes. Rinse it than pat dry before cooking with it.

Shopping list:

  • 1 eggplant
  • 2 zucchini
  • A meatless tomato sauce (if you want to go vegetarian) or Mamma’s Sausage Spaghetti Sauce  
  • 4 tbs of parmesan cheese (1tbs per layer)
  • 1 cup of grated cheddar cheese/feta cheese or ricotta cheese (put them all together if you want)
  • Salt and pepper

Prep notes:


Cut off the ends of the eggplant and zucchini. Peel the eggplant and cut it lengthwise into thin slices. Let the eggplant sit  in colander with salt for 15 minutes. Cut the zucchinis lengthwise as well without removing the peel.





Layer the eggplant and zucchini on top of each other add the sauce than the cheese and layer again until you reach about 1 inch from the top! The final layer should be cheese!

















Cook until the top gets crispy and the sauce is bubbly!







Cut into 6 pieces and serve!
